so we constantly offer premium extra virgin olive oil (EVOO) at every step of its journey.

 

CULTIVATION.

The key factor for the production of superior-quality extra virgin olive oil (EVOO) is the olive grove’s care before as much as after the harvest. This includes the retaining of wild herbs and removal of weeds for the soil to remain fertile, depending on the climate conditions as well as the variety and age of the trees in each geographic location. Each tree is pruned according to its unique needs, for the fresh air and sunlight to easily and evenly penetrate its foliage.

EARLY HARVEST.

Our olives are handpicked so that branch injuries are prevented, while each fruit’s control and highest quality are ensured. Taking place at the early stage of fruit ripening, our harvest method achieves the lowest possible acidity and the highest possible concentration of beneficial substances, such as vitamins and polyphenols.

COLD EXTRACTION.

Our fruits are transferred to the olive mill on the same day, just a few hours after harvest. The oil extraction process is conducted under strict control in cold extraction (<27C) and only by mechanical methods. This way, we maintain the highest-level concentration of vitamins and polyphenols, while ensuring extra virgin oil’s quality and purity.

STORAGE.

Traditional kioupi is synonymous with the actual concept of storage, affirming our deepest commitment to guaranteeing the ideal storage conditions before and after standardization. To prevent unwanted oxidation, which significantly degrades extra virgin olive oil’s quality, we always keep our products air-tight, COOL & SHADED.

TRACEABILITY.

κιούπι/ kioupi comes in numbered tinplate cylinders, assigned with a unique number that enables its collectors to refer to information regarding each stage of its journey; from the olive trees’ care to the product’s transfer to the points of sale.

Checks of quality and organoleptic characteristics are regularly conducted by certified and internationally established laboratories, thoroughly examining olive oil samples taken during production and storage processes.
